Keto Meal Idea- Low Carb Zucchini Burger



This was delicious and what’s even better is that I froze the bread and it is still soft after it defrosted, (though admittedly more dense that your standard bread).

For the buns:

I used the recipe found here by LEELALICIOUS 

I didn’t have all the ingredients listed so I improvised:

1/2 cup coconut flour (and a couple more tablespoons in place of the tapioca flour)

1/3 cup flax meal

2 teaspoons baking powder

4 eggs

1/2 cup coconut oil

1/2 cup unsweetened almond milk

Toppings: Sunflower Seeds

I placed the dough in a dome silicone mould and some in a muffin tray (to help them take the shape of the bun) and let them bake about 15 minutes.

For the Zucchini fritters

4 large zucchinis

1/2 cup melted cheese

2 eggs

1/2 cup coconut flour

garlic powder

onion powder

I threw the zucchini in my Ninja blender one at a time and blended them until fine.

I squeezed out all excess water and added the eggs the coconut flour and the garlic/onion powder.

I then melted the cheese in the microwave and poured it in the mixture.

Stir the mixture until well combined and then take some of the mixture in your hand and create small patties by pressing down firmly.

I made about 10, and froze them to create single meals.

You can top with some yogurt, or avocado spread.
